Peanut Brittle

Peanut brittle has always been a favorite of mine. I learned how to make this when I was a little kid. This recipe came from my grandma. It was passed on to my mom. This recipe makes a nice Christmas gift when placed in a decorative tin.

2 cups white sugar
1 cup Karo corn syrup
1/2 cup water
1 teaspoon salt
2 cups raw peanuts

Pour all the ingredients into a pot and heat on medium heat stirring continually. Continue stirring until the mixture is hard crack.

Remove from the heat and add:

1 teaspoon butter
1 1/2 teaspoon baking soda
1 teaspoon vanilla

Stir the mixture very good until it foams ups. Pour onto two greased cookie sheets very quickly.

Keep somewhere cool for two hours and then crack into chunks.

Tips

Grease the cookie sheets before starting.

Have all the secondary ingredients at hand, so you can add them quickly.

Peach Cake

This is a very tasty recipe that can be made for a snack or a dessert for dinner. It is easy to make.

3/4 cup cold butter
1 package yellow cake mix
2 egg yolks
2 cups sour cream (16 ounces)
1-29 ounce can peaches, drained
1/2 teaspoon cinnamon
1-8ounce package frozen cool whip

In a bowl, cut butter into cake mix until mixture resembles coarse crumbs.

Pat into a 13x9x2 cake pan.

In a different bowl, beat egg yolks, sour cream and mix well.

Cut peaches into 1-inch pieces and stir into sour cream mixture. Spread the mixture over the cake crumbs. Sprinkle the cinnamon on top.

Bake for 25 to 30 minutes at 350 degrees.

Remove from oven and cool.

Spread the cool whip over the top and serve.

Keep refrigerated.

Cherry O Cream Cheese Cake

This recipe is easy to make and it is ready in an hour. I remember making this recipe when I was twelve years old and I continue to make it today. Great recipe for the kids to start learning their way around the kitchen.

1 graham cracker crust
1- 8ounce package of cream cheese
1- 15 ounce can sweeten condensed milk (1 1/3 cup)
1/3 teaspoon lemon juice
1 teaspoon vanilla
1 can prepared cherry pie filling

Allow cream cheese to soften to room temperature. Place softened cream cheese in a mixing bowl and add condensed milk. Beat until fluffy. Keep beating and add lemon juice and vanilla. Blend well.

Pour the mixture into the graham cracker crust and chill for one to two hours.

Add cherry pie filling and serve.

Cucumber Salad

This is a vegetarian's delight as well as anyone that enjoys a good veggie salad. It is easy to make and does not cost much if you grow some of your own cucumbers. Children may not enjoy not enjoy this recipe.

4 thinly sliced and pared cucumbers
1 medium onion sliced thinly
1 cup sour cream
1/4 cup sugar
1/2 teaspoon salt
1 Tablespoon vinegar
1/2 teaspoon dill seed

Chill sliced cucumbers and onion in heavily salted water in the refrigerator for several hours.

Drain and rinse to remove the salt. Fold in sour cream, sugar, salt, and vinegar and dill seed and mix thoroughly. Serve cold.

Salisbury Steak

This recipe is very tasty. It is also quick and easy to make when you need something fast. Instead of buying store bought Salisbury Steak, you can make your own.

1 can Campbell's mushroom soup
1 1/2 pounds ground beef
1/2 cup fine dried breadcrumbs
1 egg beaten
1/4 cup finely chopped onion
1/3 cup water

Preheat oven to 350 degrees.

Mix 1/4 cup of the mushroom soup with ground beef, breadcrumbs, egg and onion together in a bowl. Make sure everything is thoroughly mixed.

Separate the mixture into 6 parts. Make each part into a flat patty. Then place into a baking dish and bake in the oven for thirty minutes.

Remove from oven and spoon off any fat.

Mix the remaining mushroom soup and water together and pour over the meat. Bake for another ten minutes.

Cherry Topsy Turvey

Just thinking about this recipe will make you hungry. It is fast and easy to make and does not cost a lot to make.

1 cup flour
1 1/2 Teaspoon baking powder
1/2 Teaspoon salt
1 1/2 Tablespoon butter
1 cup sugar
1 well beaten egg
1/2 cup cold water
1/2 Teaspoon vanilla
1 two pound can of pie cherries drained
1/3 cup cherry juice

Sift flour with baking powder and salt.

Cream together butter and sugar in a bowl. Beat in egg. Add the sifted flour mixture alternating with the water. Beat well then stir in the vanilla.

Pour into a greased baking dish.

Pour the drained cherries over the batter. Pour the saved cherry juice over the cherries.

Bake in the oven for forty to fifty minutes at 350 degrees.

Cornbread and Sausage Stuffing

This is a tasty stuffing. Even if you want the stuffing without the turkey, you can make this recipe quickly and easily.

6 Tablespoon butter
1 cup chopped onion
1 cup chopped celery
1/2 cup green bell pepper
2 Tablespoon poultry seasoning
1 1/2 Teaspoon thyme leaves
1 Teaspoon garlic powder
1 cup cooked and crumbled cornbread
1/2 pound cooked and crumbled sausage
1 can chicken broth

Preheat oven to 350 degrees.

In a skillet, melt the butter and sauté onion, bell pepper and celery. Sauté for five minutes. Stir in poultry seasoning, thyme and garlic.

Combine cornbread, veggie mixture and sausage. Add the chicken broth and toss together gently.

Place the mixture into a baking pan 13x9 and bake for thirty minutes in oven.

Holiday Beets For Thanksgiving

When you need something for the holidays, this beet recipe will appeal to everyone whether they like beets or not. It is tasty and simple to make.

Holiday Beets

2 1/2 cup cooked beets
1/4 cup beet juice
1/4 cup vinegar
1/3 cup sugar
1-Tablespoon cornstarch
2-Tablespoon butter

Mix the beet juice, vinegar, sugar and cornstarch together and cook over a low heat. Continue cooking until the mixture thickens. Add the beets and simmer a few minutes.

Serve hot.

Wieners and Beans

This make a quick recipe for kids that are hungry for a snack or even for a party treat. It does not sound tasty because of the pineapple, but it is delicious. I remember this recipe from when I was little.

1 1/2 cup drained crushed pineapple
2-Tablespoon onion
2-Tablespoon brown sugar
1-Tablespoon catsup
1-teaspoon mustard
2 cans bake beans
1-pound wieners cut into 1-inch pieces

Mix everything together over heat. Simmer until hot.

Tips And Gravy

Tips and gravy are great over potatoes. This recipes calls for two pounds of tenderized stew meat, one big can of mushroom soup and one package of Lipton onion soup mix. Place the beef stew meat in a casserole dish and add the Lipton onion soup and the mushroom soup. Cover and bake in the oven at 350 degrees for two hours.

Serve with potatoes, Brown and Serve Buns, and green beans.

If you do not like all the onion taste, you can use a strainer to separate the mix and then add just a little back into the bowl with the mixture in the strainer.

This recipe is great for a quick meal for the family and for special guests that come to dinner.

Pork Chops and Gravy

This recipe is awesome. All you need is six pork chops and a big can of mushroom soup. Place the pork chops in a casserole bowl and cover with the mushroom soup. Cover and bake in the oven at 350 degrees for an hour. If you have the time and want the pork chops to be really tender, bake for an hour at 350 degrees and then turn down the oven to 250 degrees for another hour.

Serve with potatoes, Grand Butter Buns and a vegetable such as green beans or corn. Make the buns in the oven after the pork chops are done. The pork chops will stay nice and hot.

This is one meal that can be served to the family or to guests. It is a great meal to make when you have little time to make dinner.
